This gluten free all-in-one chicken dinner can easily be pre-prepared the night before you are serving it, placed in the refrigerator and cooked the following day.
Ingredients:
Dark Chicken Meat (Thighs/Legs)
1 Red & 1 Green Pepper
1 Onion
1/2 Bag of Potatoes
Sweet Baby Rays BBQ Sauce
Salt/Pepper to taste
Directions:
Boil potatoes until they are easy to cut but hard enough that they won’t fall apart when peeled.
Preheat oven to 350 degrees.
Skin potatoes and cut into fours.
Slice red/green pepper and onion.
Combine chicken, peppers, onion, potatoes, Sweet Baby Rays BBQ sauce (I use about 1/2 – 3/4th of the medium container) and salt/pepper.
Cover with aluminum and bake one hour in 350 degrees.
Stir often and put juices on top.
After an hour, uncover and move chicken on top of baking dish so it browns.
Continue basting until cooked (about another 1 – 1 1/2 hours).
Use a gluten free tag on your serving utensil or baster so others don’t cross contaminate your dish.
