Gluten Free Chocolate Chip Cookies
Ingredients
2 sticks of room temperature salted butter (I prefer Kellers)
2 large eggs
3/4 cups sugar
3/4 cups of brown sugar
1 tsp gluten free vanilla extract
1 tsp baking soda
1 tsp salt
2 1/4 cups of all purpose gluten free flour
1 bag of Nebisco or Hershey semi-sweet chocolate chips

Note: If your purpose gluten free flour doesn’t include xanthan gum (binds the ingredients together) then add 1 1/2 tsp of xanthan gum. If you are grain free, I mix my own flour combination — 1 1/4 cup almond flour, 1/2 cup coconut flour and 1/2 cup tapioca flour. Of course, then I add 1 1/2 tsp of xanthan gum so everything sticks together.
Directions
In one bowl, combine butter, eggs, brown sugar, white sugar and vanilla extract. Mix.
In second bowl, combine flour (gluten free or grain free mix, xanthan gum if needed), salt and baking soda. Mix. Add second bowl to first bowl.
Add desired amount of chocolate chips. More chocolate chips will yield a more chocolaty, gluten free, chocolate chip cookie. 🙂
Preheat oven to 350. Use a paper towel and add a little Crisco on a cookie sheet so the cookies don’t stick when they are done baking. I prefer the cookie sheets that are air insulated. I also usually add my gluten free tag to the cookie tray so everyone in the house knows I am baking something gluten free! Spoon out balls of dough and place them on the cookie sheet. Bake around 10 minutes or until cookies are light brown.
The cookies below are grain free chocolate chip cookies. They came out delicious but do look different from the gluten free ones I make which look less grainy.

Ps – I used more coconut flour in this grain free chocolate chip cookie recipe below and the cookies seemed to rise more. Playing with the flour combinations will alter the cookie tastes. I am always experimenting! You can also add a gluten free label to a bag your going to freeze so others know what cookies are gluten free.
NOTE: While watching the Olympics (gluten free style), we had family over and I made these Olympic rings, gluten free chocolate chip cookies. All I did was made gluten free icing (3 3/4 cups confectioners sugar – which isn’t grain free but is gfree -, 3 TBSP of milk, 1 tsp of vanilla extract and coloring). These gluten free cookies made a fun addition to the Olympic watching party;)
