Gluten Free Lime Garlic Chicken Crock Pot
Prep Time: 10 minutes / Total Cook Time: 6-8 hrs
12 chicken thighs
Juice from 1 lime – approx. 4 Tbsp.
1 1/2 c. gluten free chicken broth
2 finely chopped cloves of garlic
1/2 tsp. thyme
2 Tbsp. butter
Black pepper to taste
Remove skin from chicken, wash and place thighs in crock pot on low. Make sure to tag your crock pot “gluten free” so family members don’t accidentally dip glutenous foods in it like a piece of bread. Add lime juice, chicken broth, garlic, thyme, butter and pepper. Cover and cook for 6 – 8 hours. Add chicken to sides of pasta (photo pictured below is pesto pasta), rice or mashed potatoes. Top with remaining juices. Serve with or without gluten free toothpick so all know your gluten free dish!
