Gluten Free Summer Salad Dressing Recipe : With the excitement of our garden beginning to produce fruits and vegetables, I always enjoy putting aside our store bought salad dressing bottles every summer so our family can enjoy new fresh summer gluten free recipes based on our garden production. Who needs the added gluten and calories of croutons when you can add texture, color and flavor to a dull salad with a few easy steps:
Ingredients:
- Mixed Greens
- Baby Spinach Leaves
- Chopped Walnuts
- Feta Cheese (it is optional in case you are dairy free)
- Sliced Strawberries
- Fresh Basil
- Olive Oil
- White Vinegar
- Sea Salt
- Pepper
Steps:
- Add Mixed Greens, Baby Spinach with a few sliced strawberries, walnuts and feta cheese. Put aside.
- Time to mix the salad dressing. Combine 3 parts olive oil to one part vinegar. You can use any type of vinegar (Balsamic or Red Wine). I was craving white vinegar for this recipe so that is what I used. Chop basil and add to dressing. Add sea salt and pepper to taste. Mix and add to salad.
3. Mix and add to salad. I usually add a few additional walnuts, crumbled feta cheese and strawberries to the top of the salad for presentation. Serve and enjoy!
