Gluten Free Banana Bread Recipe
1/2 cup butter
3/4 cup brown sugar
1 tsp vanilla
1 egg yolk
2 browned bananas
2 c gluten free all purpose flour (I used Namaste for this recipe)
1 tsp salt
3/4 cup buttermilk (don’t worry if you don’t have it – use this mini recipe: 1 cup of milk combined with 2 tbsp of clear vinegar – let sit 5-10 minutes)
Crisco vegetable shortening
1 1/2 cups of flour
1 stick of butter
1 cup of sugar
2 tbsp of cinnamon
1/2 tsp of baking powder
dusting of confectioners sugar
Take 2 browned bananas
Combine bananas with butter, brown sugar, vanilla, eggs, flour, salt & buttermilk.
Coat pans with Crisco Vegetable Shortening & a paper towel & add mixed ingredients.
Bake on 325 degrees for 60 – 70 minutes. As the bread bakes, make the crumb topping with flour, butter, sugar, cinnamon and baking powder. After you combined all the ingredients, shake the mix to loosen the crumbs. Once the bread is golden brown, take out of the oven. Don’t overcook. Add crumbs on top of the baked banana bread. Put back in the oven for 10 minutes so the crumbs harden a bit.
Once the gluten free banana bread topping is done baking, take out and shake confectioners sugar on top of the bread. Add a Gluten Free Labels toothpick flag so your gluten free banana bread stays gluten free! Enjoy!
